March 25th - slowfood?

"A nation's diet can be more revealing that its art or literature."

My chef friend Brad owns Spire Catering. Cooking food is his life and he is very good at it. We trade services, he creates amazing, all natural foods and lets me eat it and I take pictures of the food for him.
Last night Anna and I went to his newly acquired space in Laporte, IN to have a 5 course meal and we were, as per usual, floored by how awesome everything was in every possible sensory category.

The above quote is from Fast Food Nation. A book I've read parts of, but have never finished.

The pieces on top of this dessert are actual  chips of garlic. Every course of the dinner had a garlic theme. Pretty cool huh.

Brad is an advocate of the slow food movement, which as you can imagine, is the opposite of fast food. It supports using sustainable locally grown foods that have higher nutrient density and are derived from natural means under a normal growth situation (no crazy hormones, pesticides, etc.)
